Healthy Shake & Bake

Kraft had it right with the idea of Shake & Bake. Easy prep and and easy clean up! The only problem is that Shake & Bake is not whole 30, paleo, clean eating, (the list goes on). I took one of my friends regular dinner meals (Ranch Breaded Chicken) and turned it into a clean eating recipe everyone will enjoy!

What’s it going to be?

What will you sacrifice this week? Getting to the gym first thing in the morning means you’re going to have to go to bed a little earlier or give up sleeping in. How important is getting to the gym for you? How bad do you really want to get in shape?

Losing weight will require you to give up some foods you love and maybe eating some foods you don’t love.

Paleo Fruit Compote

This reminds me of a mix of cherry and apple pie! I made this as a dessert and then ate it the next day for breakfast and with lunch! I just can't get enough of this yummy fall recipe. This will be a favorite for everyone, and is paleo, gluten free, dairy free and whole 30 approved!

Ingredients:
1 apple (I used red delicious but you can use any apple you prefer)
3 plums
1 cup frozen dark red cherries
3 large dates
1/2 cup orange juice
1/2 cup almond flour
1/2 teaspoon cinnamon

Directions:
Preheat oven to 400 degrees.

Meyer Lemon Chicken

Ingredients:

1 pound chicken breast cutlets
2 Meyer lemons (Any lemons will do, Meyer lemons just sound fancy) 😉
1 shallot diced
1/4 cup white wine (Use homemade chicken broth for Whole 30 and Paleo option)
1 clove garlic minced
1 teaspoon olive oil
1 teaspoon thyme
Salt and pepper

Directions:

- preheat oven to 400 degrees
- coat a baking dish with nonstick cooking spray
- sauté the the shallots and garlic in olive oil for about 4 minutes
- add the wine and the juice of one lemon to the pan, heat to boil and then reduce to simmer.

Last week I attended one of the best retreats I’ve ever been to. Roughly 48 hours of learning, sharing, problem solving and future preparing with dozens of other like-minded individuals. Going in, I wasn’t too sure what to expect, but I very quickly realized this was not going to be your ordinary sit-and-listen type of conference.

Paleo – Grain Free – Gluten Free – Clean Eating – Whole 30

Ingredients:

Beef & Broccoli

1 pound of flank steak (or another type of lean thinly sliced beef)
1 head of broccoli
3/4 cup beef broth
1/2 cup Bragg Liquid Aminos All Purpose Seasoning (for Paleo and Whole 30 options use Coconut Aminos instead)
1 teaspoon of salt
1 teaspoon of pepper
1 teaspoon fresh grated ginger
2 garlic cloves crushed
1/2 teaspoon red pepper flakes
1 teaspoon of sesame oil

Directions:

Beef & Broccoli

Combine 1/2 cup of beef broth, the Liquid Aminos, salt, pepper, ginger, garlic and red pepper flakes in a bowl.
